Description
Palm Jaggery is produced by collecting fresh, unfermented sap from palm trees early in the morning. The sap is filtered to remove impurities and then slowly boiled in large pans over a wood-fired stove. During boiling, the liquid is continuously stirred to prevent burning and to enhance caramelization. As it thickens, the syrup becomes dark and concentrated, finally solidifying into a rich, grainy jaggery. The mixture is then poured into molds, allowed to cool, and shaped into blocks or balls. This traditional method yields pure, chemical-free Palm Jaggery with a natural sweetness and unique earthy flavor.
